We’ve been doing pretty well on the good ol’ healthy eating front, but c’mon, a girl’s gotta splurge every now and then, right??
I got a new waffle maker for Christmas and LOVE any excuse to try it out…especially when there’s a yummy recipe involved. I do plan on researching this whole “protein-powder-in-your-pancake/waffle-batter” phenomenon I’ve been hearing about, but for now, it’s:
Banana Nanner Walnut Waffles

(Note: I halved this recipe, which was interesting, given some of the measurements, and it still made A TON! But as my friend, Becky always says, “Go Big or Go Home!”)
4 c. flour
1/4 c. sugar
2 T. baking soda
1 t. salt
4 large eggs, lightly beaten
3/4 c. vegetable oil
2 c. low-fat vanilla yogurt
1 1/2 c. reduced-fat milk
2 c. banana, mashed
1 c. chopped walnuts (I used pecans)
Combine flour, sugar, baking soda and salt in a large mixing bowl. Add eggs and oil and whisk until blended. Stir in yogurt, milk, banana and nuts. Pour onto pre-heated, and greased, waffle iron. Soak in syrup, sprinkle with powdered sugar, and enjoy!
